The physical properties of the hemp seeds offer measurable characteristics that contribute to defining the species. However, they do not provide information about the plant’s maturation process [13,14,29].
Hemp seeds, covered by a thin pericarp with two layers, have an endosperm and two cotyledons inside. They constitute a valuable energy source, providing 500–600 Kcal/100 g of product, according to data provided by the U.S. Department of Agriculture (USDA) [30].
